These sticks come from the species Cinnamomum burmanii (also known as cassia) and are cultivated in countries like Indonesia, Malaysia, and Thailand. This well-known spice comes from a type of evergreen tree. Try infusing into pudding or ice cream bases, stewed fruit, hot drinks and even stews made with meat or game. Cinnamon is an ingredient in Chinese five spice powder and the Indian spice, garam masala.
