Part of the Classic Series by Joyce Chen, the 9.5" Flat Bottom Stir Fry Pan is a solid workhorse of a pan with 1.5mm gauge carbon steel body. Coated with Xylan non-stick coating for long lasting, easy clean up cooking. It's made for use on gas or electric burners and the pan's quality weight carbon steel body is designed for rapid, even heating and cooling that is a must for any stir-fry. These sturdy carbon steel pans will deliver excellent cooking performance and feature a Birch wood handle which is designed to stay cool on the stovetop, so you can easily remove the pan from the burner without using potholders. The Xylan Non Stick coating allows you to cook with little or no oil - a healthy delicious cooking method that brings out the food's natural flavors. The restaurant flourished, and in 1973 a larger Cambridge restaurant was opened. Chen also began writing Chinese cookbooks and in the 1970s began hosting a cooking show on public television. She found that the selection and quality of Chinese cookware in America didn't live up to her high standards so she developed her own.
