As esteemed 19c gastronome Jean-Anthelme Brillat-Savarin noted: "The most learned men have sought to ascertain the secret, and fancied they discovered the seed. The "white truffle" or "trifola d'Alba" (Tuber magnatum) comes mostly from the Langhe and Montferrat areas of the Piedmont region in northern Italy and, most famously, in the countryside around the cities of Alba and Asti.
