Ortiz Sardines - fished in Galicia in northern Sapin and prepared according to a traditional recipe from 1824. Ortiz use the freshest fish (3 to 4 in a tin) which is fried in virgin olive oil and then, after resting for few minutes, packed by hand. Preserved sardines, like bonito tuna, have a flavour which improves with the years, becoming more tender and delicate.
