Santoku Knives - A santoku is an Asian-style chef's knife. The Shun Sora 7" Hollow-Edge Santoku Knife is lightweight and agile with slight blade indentations called "hollow-grounds" to reduce friction and help prevent foods from sticking. The Asian-style knife with its slightly curved midsection allows for rocking cuts to prepare thick meats, tough-skinned produce and even delicate herbs. Santoku means "three virtues" which often refers to the knife's exceptional performance in three styles of kitchen prep: chopping, slicing and mincing. In Japanese, Sora means "sky" and the sky's the limit in your kitchen prep with Shun's stunning new Sora line with exceptional handcrafted quality. Sora's innovative Composite Blade Technology blends a VG10 san mai cutting edge with a mirror-polished 420J Japanese stainless-steel upper blade. The laser-cut blade sections are permanently braze welded for a design with an attractive wavy pattern at the joint resembling traditional Japanese sword hamon lines. This puts high-performance material where it's needed - on the 16-degree, double-bevel blade edge. The textured PP/TPE polymer blend handle lends contemporary styling and a secure grip for balanced, agile control. Use and Care Your Shun Sora Santoku Knife should be hand washed. Simply wipe clean with a wet cloth and dishwashing detergent. Rinse thoroughly and dry immediately. Carefully dry from blade spine to edge, making sure to dry the edge very thoroughly. To prevent slight tarnishing, be sure to remove acidic foods (lemon, mustard, ketchup, etc.) from the blade immediately after use. If blade should show some signs of staining, clean with a nonabrasive metal polish. To help your hollow-edge knife retain its edge longer, use an appropriate cutting surface. Wood and polypropylene boards are excellent cutting surfaces. Tile, ceramic, marble, granite, glass and acrylic cutting boards are hard on your knives. To maximize the life of your blade, regular honing with the Shun Sora honing steel is recommended. Weekly honing will extend the time between sharpening significantly. Occasionally, your Shun knives may require professional sharpening to maintain the razor-sharp cutting edges. Shun will sharpen your knives for free. You simply pay for postage. It is best to store your santoku knife in the storage box, a knife block or in-drawer knife tray.
