The Damascus-clad kitchen knife is welded and roll forged with 71 alternating micro layers of high carbon, high chromium VG10 and VG2 stainless steels, creating a finer grain and improved strength and beauty. Additional hot forging of the Shun Dual Core kiritsuke knife produces the striking herringbone edge design. The two steels run the entire blade length and wear at varying rates to create edge micro serrations that stay remarkably sharp longer.
