Simply clean your knives under running water with a mild detergent. Dry with a cloth and store the knives the knife block. Avoid cutting extremely hard foods like shellfish or frozen food. To help preserve the blade edge, avoid moving the blade from side to side on the cutting board. Hone regularly with honing steel, preferable every few uses to maintain scalpel-like sharpness. Re-sharpen when honing is no longer sufficient. Once or twice a year is recommended, depending on the frequency of use. When needed, simply wipe the knife block clean and dry thoroughly.
