Cilantro, also known as Chinese Parsley, comes from the leaves of the coriander plant, but has a very different flavor from coriander seeds. It adds pungent flavor to Tex-Mex cuisine and Asian dishes. Cilantro has a nice affinity for mint and cumin, and blends well with garlic and chiles. Try it in stir-fries, soups and stews, and Indian chutneys, relishes and curries.
