We make our own caramel from a recipe developed over the years. We want you to know that we place more salt on the caramels than needed because we know that some crystals will fall off during shipping. If you prefer less salt, just roll some of the crystals off of the caramels. We use larger than normal salt crystals to make it easy to roll them off the chocolates. Each customer tends to prefer more or less salt than the next customer, so by making the caramels the way we do, each person can have just the right amount of salt.
