The great care and attention given to the product, the passion for every single detail, the ongoing search for fine, select oils characterizes Oleificio Ranieri's entire production, which includes: olive oils, organic oils, "Umbria" PDO extra virgin olive oil, and flavoured olive oils. With Black Truffle Infused Extra Virgin Olive Oil you can change a simple meal into a speciality: try it with any pasta or rice dish,eat or even a few drops on fried eggs, or in fresh bread. As esteemed 19c gastronome Jean-Anthelme Brillat-Savarin noted: "The most learned men have sought to ascertain the secret, and fancied they discovered the seed. Their promises, however, were vain, and no planting was ever followed by a harvest. This perhaps is all right, for as one of the great values of truffles is their dearness, perhaps they would be less highly esteemed if they were cheaper." The black truffle or black Prigord truffle (Tuber melanosporum), is named after the Prigord region in France and grows with oak and hazelnut trees. Black truffles are harvested in late autumn and winter and are used to refine the taste of meat, fish, soups and risotto.
