It sits on the bottom of the steamer pot with its holes up and food rests on the insert. The tiered pots allow you to steam different foods simultaneously, but for different lengths of time. You can start cooking potatoes and corn, for example, and then add a tier of lobster and clams for an indoor or inland clambake. Faucets on pots allow you to drain off the cooking liquid without disturbing any sediment that the seafood may have released. They also provide an important safety feature, since you can drain off the liquid without lifting a hot pot. After you've poured off the broth you can serve it with the shellfish or use it later as a base for soup. For an easy, fast, and delicious pasta sauce, boil down the broth to thicken it slightly, then whisk in cup of olive oil, butter, or cream. Not recommended for glass cooktops. The Columbian Home Products name was taken from the Columbian Exposition World Fair in Chicago in 1893 where we won the cookware innovation award for our naturally non-stick enameling process. We have been producing Granite Ware cookware in our Terre Haute, IN facility since 1901. Granite Ware has a carbon steel core for strength, conductivity and superior heat distribution. Porcelain is fused to the steel at 2,000 degrees fahrenheit producing a non-porous, inert glass surface that is naturally non-stick. Porcelain can chip if dropped, however this does not reduce the effectiveness of the cookware. There are no PTFEs, PFOAs or any other chemicals to change the taste, color or nutritional value of the food.
