This fruit which originally came from West Africa has become the fruit of Jamaica. When cooked and combined with seasoned saltfish, pickled herring or vegetarian bacon bits, it is called the "National Dish of Jamaica". After cooking it has a close resemblance to scrambled egg, only much tastier and more delicate. Although the fat content is 17%, it is balanced with 4% protein, fair quantities of B vitamins (except B12) and carotene which is changed into vitamin A in the body, and small quantities of iron. It is available, canned in brine, frozen by itself, or cooked & combined with seasoned saltfish, roast bread fruit slices and frozen as a Ready meal.
