These crystals are used to aid in the melting of carob, chocolate, and yogurt coatings. Paramount crystals help make the coatings smooth and easier to pour into molds and also help to thin out coatings for ease in dipping and coating. Add 1/4 cup of crystals per each pound of coating. Melt your chocolate and add a little at a time, stir between each addition, until the desired consistency is reached.
