White tea is rapidly growing in popularity. Originating from the Fujian province in china, peony white tea (also known as pai mu tan) is plucked in the early spring. These buds and leaves are dried immediately after picking, preventing any oxidation. These leaves are processed in their most "true" form, making them very different from green or black teas. Large green and brown leaves mixed with long, fuzzy buds produce a golden liquor. The cup is very mild with a clean earthy flavor.
