Desiccated coconut is an unsweetened, somewhat powdery product which is produced by drying shredded coconut and then grinding the shreds. It has a rich texture (holds up well in cooking) very low moisture content and a higher content of nutrients (good carbs, good fats and great proteins) than coconut flour. It makes for a richer cooking or baking experience. Desiccated coconut is used all over for desserts; you may enjoy sprinkling it over a bowl of strawberries, onto curries, or eating it alone. It has been used in numerous recipes.
