Fenugreek seeds are one of the healthiest Indian spices use in cooking; they are also known as methi (hindi), menthulu (telugu) and venthyam (tamil). The seeds are a very good source of soluble dietary fiber. Soaking the seeds in water makes their outer coat soft and mucilaginous. 100 g of seeds provide 24.6 g or over 65% of dietary fiber. This prized spice is an excellent source of minerals like copper, potassium, calcium, iron, selenium, zinc, manganese, and magnesium. Potassium is an important component of cell and body fluids that helps control heart rate and blood pressure by countering action on sodium. Iron is essential for red blood cell production and as a co-factor for cytochrome-oxidases enzymes. Culinary Use: - Fenugreek is one of the chief ingredients in curry - Small quantity of sprouted seeds added to vegetables and lentil dishes. - Sprouted fenugreek seeds are used in salads, paste, dips, fillings, etc. To sprout fenugreek seeds, wash seeds and transfer to the plastic beverage cup. Add 1 cup of water. Cover it with a lid. Let the seeds soak in the water for about 12 hours. Drain out water. Rinse with fresh water. Drain out water. Put the lid back on. Repeat this step every 6 to 8 hours for four days. After the sprouts have reached the desired length, rinse them thoroughly and drain. Pat dry with paper towel, and store in the refrigerator till needed.
